Sweet Potato Protein Brownies

I’m always on the hunt for a new, simple, healthy recipe that caters to my sweet tooth. In doing so however, I have to be picky to make sure what I’m baking doesn’t throw off my daily macros. Whether you’re training for your first competition, cutting down for that summer bod, or simply maintaining a healthy lifestyle, there are plenty of healthy recipes to be had. Personally, I enjoy a post workout or nighttime snack that helps me prepare for the next day’s workouts. Enjoy! ~ Marzena 
Ingredients:

3 large sweet potatoes, boiled

2-3 scoops chocolate CASEIN protein powder

1 tsp baking powder

1/3 cup organic coconut oil

3 egg whites

2 whole eggs

4 tbsp raw cacao powder

2 tbsp flaxseeds, soaked

Directions:
    1. Scrub sweet potatoes and rinse with cool water. Use a paring knife to peel sweet potatoes, then cut into bite-sized pieces.
    2. Fill a large pot about half full with water and add a dash of sea salt.
    3. Add sweet potato and boil on high for 20 to 25 minutes until tender.
    4. Pour sweet potatoes into colander and rinse with cold water.
    5. Preheat oven to 350°F. Lightly coat baking tray with cooking spray.
    6. In a large bowl, mash sweet potatoes. Add CASEIN, baking soda, raw cocoa, and mix well.
    7. Add egg whites, eggs, coconut oil and flaxseeds to the mixture and combine.
    8. Pour mixture into baking tray, spreading the mixture evenly with a spatula.
    9. Bake for 20 to 25 minutes.
    10. Remove from oven and let cool before cutting into squares.
